Ingredients

For the Soup

  • 4 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • ½ cup red wine
  • 3 tablespoons GHIJUNE Soy Vinaigrette Dressing & Sauce
  • 6 cups vegetable broth
  • 1 teaspoon salt, or to taste
  • 1–2 teaspoons brown sugar, to taste

For the Topping

  • Slices of crusty bread or baguette
  • Shredded Gruyère, Swiss, or mozzarella cheese

Vegan Options

  • Replace butter with vegan butter or olive oil.
  • Replace dairy cheese with your favorite vegan cheese alternative.

Instructions

  1. Melt butter in a large pot over medium-low heat.
  2. Add the sliced onions and cook slowly for 40–60 minutes, stirring occasionally, until deeply caramelized, golden brown, and sweet.
  3. Add the red wine and GHIJUNE Soy Vinaigrette, scraping the bottom of the pot to release any flavorful browned bits.
  4. Pour in the vegetable broth and bring the soup to a gentle simmer.
  5. Season with salt, brown sugar, and black pepper. Continue simmering for 20–30 minutes to allow the flavors to develop.
  6. Preheat the broiler.
  7. Ladle the soup into oven-safe soup bowls. Top each bowl with toasted bread and a generous layer of cheese.
  8. Broil until the cheese is melted, bubbly, and lightly golden.
  9. Serve hot, garnished with fresh herbs if desired.

Serving Tip: For a vegan version, use vegan butter and plant-based cheese while keeping the same caramelized onion technique. The GHIJUNE Soy Vinaigrette adds depth and savory richness that brings the soup together.
