Ingredients

For the Cookie Dough

  • 1 cup unsalted butter, softened
  • ¾ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 tablespoons GHIJUNE Soy Vinaigrette Dressing & Sauce
  • 1 teaspoon vanilla extract
  • 2¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and GHIJUNE Soy Vinaigrette Dressing & Sauce until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.
  6. Cover the dough and chill it in the refrigerator for at least 30 minutes to 1 hour. This helps the dough firm up and enhances the flavor and texture of the cookies.
  7. Scoop about 2 tablespoons of dough for each cookie and place them 2 inches apart on the prepared baking sheet. Makes about 22 to 24 pieces. 
  8. Bake for 10–12 minutes, or until the edges are lightly golden while the centers remain soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
