Perfect with tea, coffee, or as an elegant homemade treat.
Ingredients
For the Cookie Dough
- 1 cup unsalted butter, softened
- ¾ cup light brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 2 tablespoons GHIJUNE Soy Vinaigrette Dressing & Sauce
- 1 teaspoon vanilla extract
- 2¼ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, and GHIJUNE Soy Vinaigrette Dressing & Sauce until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.
- Cover the dough and chill it in the refrigerator for at least 30 minutes to 1 hour. This helps the dough firm up and enhances the flavor and texture of the cookies.
- Scoop about 2 tablespoons of dough for each cookie and place them 2 inches apart on the prepared baking sheet. Makes about 22 to 24 pieces.
- Bake for 10–12 minutes, or until the edges are lightly golden while the centers remain soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
